Freezing Cabbage

Cabbage does not freeze particularly well, it tends to end up limp and water-logged, quickly developing an oxidised colour, arouma or flavour. However, if you freeze the cabbage relatively quickly and follow the instructions below, it can work well as a method of making stuffed cabbage.

Wash the head of cabbage and remove the outer leaves. Put the whole head in a freezer bag and freeze. When you want to make stuffed cabbage just defrost the head. The leaves will peel away easily and you won't burn your fingers from cabbage that has been blanched and is too hot to handle.
