Ginger poached Salmon with Confetti Cabbage

(Serves 4 people)

Confetti Cabbage

Directions

For the poached salmon you combine the first 5 ingredients in a non-stick skillet. Bring to a boil, reduce heat and simmer for 10 minutes. Add salmon and simmer approximately 8 minutes until fish flakes when tested with a fork.

For the confetti cabbage you combine all the ingredients in a Dutch oven. Bring to a boil, reduce to medium and cook approximately 5 minutes until vegetables are crisp.

Serve nicely on top of each other.
